Homemade Spanish Rice

Sorry this took so long but here is the second installment in the "Homemade Mexican Dinner" series... Spanish Rice!

What you will need:
2 tablespoons olive oil
1 onion (finely chopped)
1 garlic clove (minced)
2 cups long grain rice
3 cups chicken stock
1 cup diced fresh tomatoes or 1 can tomatoes
1 tablespoon tomato paste 
1 teaspoon oregano
1 teaspoon salt

Add olive oil to rice and brown for 4-5 minutes
Add onions and garlic to rice and saute for an additional 2-3 minutes
In a separate pan bring chicken stock to a slow boil and add remaining ingredients and return to a boil.  
Add rice and reduce to medium low heat.  
Cover and cook for 20 minutes or until rice is tender.  
Fluff rice with ingredients to ensure it is mixed completely.  Allow to sit for 5 minutes and serve.

  1. I made this last weekend and it was great! I ended up eating more of the rice than anything else for dinner, and it was also good as a leftover the next day at lunch with tortillas. :-D
