Turkey Tamales

Are you looking for something new to do with those leftovers from Thanksgiving?  Give this a try!

Take one left over turkey pulled from the bone.
Mix the following:
1 medium onion
2 large bell peppers
1 stalk celery.
Mix ingredients and cook down with your choice of sausage (andouille works great).

Next cook the grits or "masa" using:
1 tablespoon garlic
1 tablespoon shallots
2 tablespoons butter
1 cup cream
1 quart chicken stock
3 cups corn meal

Bring the mixture to a boil. Stir in corn meal. Season to taste with salt and pepper. You can also add any cheese you like. Cool.
After soaking the husk in water, wet the wrapper and layer the masa to cover the wrapper.
Layer the onion mixture then the turkey. Roll them up, wrap it in Saran wrap.  Great to freeze for later!  Yummmyyy!!!!
